Step-1 : Take 1 tablespoon of corn starch then mix it with enough distilled water to form a corn starch paste. Step-2 : Add 250 mL water to the corn starch paste and bring to a boil. This forms a starch solution. Step-3 : Place about 75 mL water in a flask or glass. Add 10 drops of the solution you made in Steps 1 and 2 to the water. Step-4 : Add the 2 percent solution of iodine slowly until the color of the liquid in the flask or glass becomes dark bluish purple, almost black. So, this solution is your vitamin C indicator. Step-5 : Compare the solution in step 4, to the vitamin C concentration of different foods. The lighter color of the indicator solution after you add the food to it means the more vitamin C present.
The fruit juices may be easier to test of the vitamin C indicator. Put about the same amount (of drops) of juice, 5 mL for instance, and compare the colors. You can compare by observing and recording how many drops you add before the solution becomes colorless or fill several test tubes with indicator. Which one have the most vitamin C can be seen from the lightest color of the vitamin C indicator.
